This recipe came to us from our friend Kestrel. It's an unusual combination of flavors, but so good!
1 bunch radishes, sliced
1 Tbsp sugar
1 tsp salt (or to taste)
1 large, sweet orange, cut into small chunks
3-4 sprigs mint, chopped fine
1 tsp ground cinnamon
Sprinkle the radishes with the salt and sugar and let sit for 15 minutes or so. Then mix together with the orange pieces, mint, and cinnamon. If you can let it sit again for an hour or so, the flavors will deepen and meld. You could also add this to a base of spinach, pea shoots, or butter lettuce for a slightly less intense experience.
