This dead-simple recipe goes into the category of "dishes that cause you to eat more of a given vegetable than you would have thought possible." One good-sized head of cauliflower will probably cover two people. Don't blame me if there's not enough; I warned you.
1 big head cauliflower
4-6 sliced bacon
1 head garlic
Olive oil
Salt
Preheat the oven to 375º. Chop the cauliflower into bite-sized florets and toss with a little olive oil and salt. Chop or snip the bacon into 1-inch pieces. Separate and peel garlic cloves. Spread evenly on a rimmed baking sheet and place in the oven for 20-30 minutes, or until the bacon is crisp and the cauliflower cooked through. Season with more salt if necessary. Devour.
